Silvia GRATZ human nutritionist and food toxicologist within the Rowett Gut Health theme. Her research interests involve the role of the gut microbiota and microbial metabolites derived from dietary components on intestinal health. She studies human exposure to food contaminants (mycotoxins) through chemical food analysis (e.g. cereals, nuts, rice) and urinary biomonitoring in adult and paediatric cohorts. She also investigates the role of gut microbiota in the release, degradation and detoxification of mycotoxins. She uses a range of intestinal model systems to study gut function and host-microbe interactions in-vitro, ex-vivo and in-vivo and collaborates with clinical colleagues to use human intestinal tissue for organoid cultures.
